All in a days work...







I baked 4 dozen chocolate stout (guinness) cupcakes today. My mixer has never been so full...I was getting scared it was going to overflow. I think the next time I try to bake so many at the same time, I will do smaller batches.

Everything is still on track, the wedding is in 2 weeks. Last weekend I baked 2 dozen plain yellow cupakes that will later get filled with raspberry jam. I also bought the lovely frosting colors that you see above.

Fudge Marble Cupcakes




Wedding Cupcakes

So, I am making 120 Cupcakes for my friends wedding on May 1, 2009. I began the process today and I thought I would chronicle my experiences.

The planning process was the most daunting part but we decided on 4 flavors: marble, red velvet, chocolate stout (aka Guinness cupcakes), and vanilla raspberry filled.

The Plan:

  1. Bake 2 dozen cupcakes each week for the month of April
  2. Freeze the cupcakes that are made at the beginning of the month
  3. Thaw out any cupcakes starting Wednesday April 29th
  4. Decorate and package the cupcakes for transport April 30th - May 1st
  5. Wedding: May 1st 7:00pm.

It all sounds so easy...

First up: Fudge Marble. The recipe was supposed to make 24 but I only ended up with 21 since I am too batter happy when filling the cups. They came out pretty big. I have a lot of extra fudge glaze so I might need to compensate later and make another batch. They are cooling and waiting to be packaged for the freezer.

I am not very good at this

Yeah, so I am not a good blogger. I admit it. I have baked things and not taken pictures of them or even had the thought to post about them on here. Maybe I am not one of those people who can cronicle my life in an entertaining fashion on the internet.

Anyways, I chose not to participate in the last iron cupcake challenge because I honestly didn't think I could stomach making a cupcake with cheese. The November challenge, however, is cranberry. I think I will give it a go.

Also, I put up a post on Craig's List to try to start a Iron Cupcake Orlando, or simply a cupcake/baking meet-up group kinda thing. I got one response and I accidently deleted the email. This is not going well.

Basil Cupcake, Take 1


So, this might be my entry. This is my first attempt with the Basil, but I like it and I tend to go with my first instinct. It is a Chocolate Basil Cupcake with a White Chocolate Basil Infused Whipped Mousse topping. The cake itself is amazingly mild tasting. It is chocolaty with just a hint of basil taste. The mousse is sweet without being overwhelming and the basil adds a nice accent. Together the two work very well to make a delicious cupcake. It isn't a flashy looking cupcake, but I am not a flashy cupcake kind of girl.
